Lorsque je reçois une soumission les informations que je reçois par notification dans mon mail sont masqués comment modifier cela pour que je puisse avoir accès au informations?

Thanks for reaching out to Jotform Support. Since your account is HIPAA-Compliant, the fields may contain sensitive healthcare information, which is why by default, these fields are set to be protected in your form so they won't be shown in any of your Email notifications.
If you are sure that this doesn't contain any sensitive information, you can disable the PHI by toggling the button at the upper right portion of each element in Form Builder. This will show the data in your notification/autoresponder email.
