¿Es posible acabar un formulario sin botón de "Enviar"? Es decir, yo quiero hacer una serie de preguntas condicionadas para "guiar" al usuario mostrando u ocultando determinadas pantallas pero una vez llegue al final simplemente quiero que se cierre el formulario sin enviar email (eso ya lo sé hacer) pero tampoco quería recibir ningún envio via jotform.

Our Spanish Support agents are busy helping other Jotform users right now, so I'll try to help you in English using Google Translate, but you can reply in whichever language you feel comfortable using. Or, if you'd rather have support in Spanish, let us know and we can have them do that. But, it might take a while until they're available again.
Now, coming back to your question, you can delete the Submit button on your so people won't be able to submit it.
You can just show a message at the end of your form saying that respondents can close it when they reach it. You can use a Paragraph element to create a message on your form. Let me show you how:
1. In Form Builder, click on the Add Form Element menu on the left side of the page and drag-drop a Paragraph field onto your form.
2. Click on the Edit icon on the right side of the Paragraph field.
3. Enter a message you want to tell everyone when they reach the end of your form and click on Save on the right side of the field.
It would be a different approach for forms in the Card layout. You can edit the Submit button text as shown in the screenshot below:
Then, you can create a condition similar to what is shown in the screenshot below to prevent people from submitting your form:

Remember that you won't be able to view what people entered or selected on your form fields if the form is submitted.
