Si en esa tabla de Google Sheets tengo agregados ya casi 500 debería crear una nueva?

Now, let me help you with your question. Your Jotform account usage and limits will not affect the existing submissions that you have in your Google Sheet. So, if you're looking to pass more submissions to the sheet, you can still do so, as Google Sheet has a huge limit in terms of the numbers of rows and columns.
