Ik wil dat het aantal beschikbaarheden in het formulier wijzigt zodra iemand zich heeft ingeschreven. Dit gebeurt namelijk niet. Wie kan mij helpen?

Thanks for reaching out to Jotform Support. Unfortunately, our Dutch Support agents are busy helping other Jotform users at the moment. I'll try to help you in English using Google Translate, but you can reply in whichever language you feel comfortable using. Or, if you'd rather have support in Dutch, let us know and we can have them do that. But, keep in mind that you'd have to wait until they're available again.
Now, let me help you with your question. When I cloned and tested your form, everything worked the way it was supposed to. Take a look at the screencast below to see my results:
I have gone ahead and cleared the form cache on our end to refresh the data. Can you go ahead and try it again and let us know how it goes? If the same thing happens again, we'll look into it more to see if we can figure out what's going on.
