I have a form that I keep over the length of a school year, and hide options as they become outdated. But when a user edits their previous submission, they see all of the outdated items that I have hidden. I'd prefer not to delete them because I want to keep the data. Is there a way I can have it both ways?

You can apply conditional logic on those fields, example:
1) Add the Get Form Page URL widget to your form: https://www.jotform.com/help/252-How-to-Add-a-Widget-to-your-Form
2) Create a condition to hide multiple fields at once when the form is loaded on edit mode: https://www.jotform.com/help/196-Hide-or-Show-Multiple-Fields-at-Once
