highlighted in the image below.
* I have set the maximum number of characters in the telephone variable to
be 19. That would allow individuals to put parentheses around area codes,
hyphens between the number sets and add an extension with up to four
characters, e.g. *x0000 *yet I get this error message for the telephone
field -

It seems that you have use a Number field type for your Phone field, but number type will not let you to submit dashes.
Alternatively, you might consider using a Phone field type with enabled custom Input Mask, or a plain Text Box field.
