Hello -
How can I specify that a number field is a percentage or currency with the appropriate symbol, such as the percent sign, dollar sign, pound sterling sign, etc?

Are you trying to perform a calculation on the numeric field and append a currency symbol?
If yes, you can do that in the form calculation wizard. Here's a guide: http://www.jotform.com/help/259-How-to-perform-calculation-in-the-form
By the way, since symbols are not allowed on the numeric field, I suggest using a regular textbox field instead.

mathematical functions, so I'm good with that. I would like to show on
the form that the number refers to dollars or percent. How can I do that?
For example, I have a numeric field for annual income in which I
multiply the monthly income * 12. How do I show that number is
referring to currency?
Another example is percent. I have a field to indicate the COLA (cost
of living adjustment) percentage. I have used whole numbers for these
fields, but there is nothing to indicate that it's a percentage. For
example, to indicate a 2% COLA, I have entered 2. Should I enter .02?
How will it be identified as a percentage?

You can add dollar sign or percentage sign inside of your calculation filed before or after calculation.
