The form looks OK in preview mode but very odd (two background colors) in the builder page.Also, no matter what font I select, it appears in all CAPS. How do I get upper and lower case letters on my form?

I changed the color of your form button and they are all the same in both builder and designer. I think the changes are not properly saved, can you try again?
The button styles option is integrated into the form designer. Clicking the button styles will open the designer;
Note that you are using a theme. If changing some styles in the form designer won't take effect, that means that the theme is overriding that style. You need to inject a custom CSS codes in the form to override theme styles. For example, the field labels which I'm going to answer in the following new thread:
