Technically yes, you can set the size of your email if you wish to do that. I would just like to confirm if you are still asking about the email (which was case with the text before the one about the size), or if you are actually referring to a form instead?

It is the submitted form's email response that we get.

This is what was sent to us. (no text of what they are signing for)
We need this document to look like a form so that we can send it to insurance
companies; however the text is missing and I understand that it cannot be pushed
over to the email... which is weird. ??

The sizing option is dependent on the printing options that you have. The link you shared refers to the PDF submission showing the static text fields.
If you wish to print the form as it is with the form fields completed, that should be possible by following this guide: https://www.jotform.com/help/335-How-to-print-a-form-exactly-as-it-is-when-viewed-but-with-the-user-entered-data
The static text fields are not showing in the email notification because they are not holding any inputs. You can manually place the static text on the email template when you edit it. Here's a screenshot showing where you can edit your email template.
