Hi,
There is actually a log of all your email activity available in your account settings. Anytime you need to recover a deleted email, you should be able to. Here is our guide on where to find this feature:

You can also view your submissions from the submission view in your account:
http://www.jotform.com/help/269-How-to-view-Submissions
If ever you have any trouble with missing emails, there will be a copy stored there as well.
