For example, I'd love for the form to say [check box] Security Hardware (followed by a fill in the blank so they can indicate how many pieces have security hardware)

You can accomplish that by several ways:
1. Conditional logic, so upon clicking in the checkbox, you show a text area field
2. You can simple add the "Other" field in the checkbox
