Hi,
I have taken this option off in:
Preferences - Advanced Settings (Encrypt Form Data) is selected "NO"Secure Form is not selected
When I/we received the notification entries we need the JotForm.key to view, why if I have opted out of Encrypted Form?

I suppose the notification entries, wherein you're still asked to give your JotForm key, are your most recent submissions, is that correct? I tried creating a form, have it Encrypted at first and as expected I'm asked to enter my JotForm key. When I removed the Encryption same thing as you did, And made a Submission, it never asked me for any keys and I was able to view my Submission/Notification already.
I would suggest you try to clear your Form's Cache and make some test after.

I have done what you have suggested and it is all view-able without the key - much appreciate your help
