Hi,
I'm trying to accomplish that on each submission, a custom XML file is created and sent to an email address. What would be the best way to achieve this? I thought about a webhook that hooks up a specific url after each submission that triggers the conversion to XML. Is this maybe something that could be done with Zapier? I would need the possibility to specify a custom XML parser for the data.

You can use webhook for this but you need to convert the received data to XML. Here are some guides about webhook.
