When my users do a submission through my form how will it work? Will I receive all the submissions and have to redirect them to the user? And more importantly; When they click submit and recieve the file will my users see the hidden fields in the form and the results within them? (I have calculations going on in the background I don't wish for them to see)

Hello im2fst4u,
Yes when your user submit the form, you will receive all the submissions in your email. You can also check your submission by going to your form's submission page. The following guide should help you: http://www.jotform.com/help/269-How-to-view-Submissions
I am not sure if I have understood your this question: Will I receive all the submissions and have to redirect them to the user?
Do you want to send a copy of the submission data to your user as well? You need to simply add a form auto responder in your form and that will send the email to the person who submitted your form. Following guide should help you: http://www.jotform.com/help/26-Creating-a-Form-Autoresponder

No if the form fields are hidden, your users will not be able to see them.

Will this be the case as well when they receive the submission from the Auto Responder? -

Actually no. The notification email alert will always display all the form fields including the hidden fields as well. But you can edit you notification email alert template and delete the field which you do not want to display in submission emails. Please check the screenshot below:
