One other question - can I use conditional logic to give a different delivery charge based on location. For example, all suburbs have a flat rate of $5, but if "Mosman" is selected, it would be $10?
I would need this calculation to flow through the payments section of the form and be added to the total of all the food.

Since the requirement is to charge the shipping based on Provinces, we can instead create the products outside the payment field, make a formula to manually calculate the shipping cost, and just pass the calculated value to the payment field.
You would need to do the following:
1) Remove your products from the payment field.
2) Set up your products in checkbox or dropdown fields.
