Disable category when product selected

I want to have 2 separate categories and have it so that only one option can be selected in each category is that possible

This is not possible by using the Payment field. You will need to basic form fields with conditional logic to achieve this:

After you disable fields using conditional logic, you need to use the calculation field to calculate the total and pass it to the payment field.
