Are you perhaps referring to showing hidden columns? You can click on the Columns button to hide/show fields on your table.
If, however, you're referring to something else, kindly share some more information so we can point you in the right direction.

Sorry for the confusion. Tables is the new version of the submissions page. Columns that are added to the table automatically can only be viewed by you as the form owner.

Sure. First, you need to click the "+ Add" button in your tables and then follow the short screencast below.

tables, so there are no additional columns to add. Is that the only way to

Could you kindly share with us the form you are referring to?
Regarding Tables, each form will have Tables of its own. You may access each form's Tables by clicking on the form, then click Submissions.
Then, you will be directed to the form's Tables.
Tables work similarly to Spreadsheet. So my colleague is suggesting to create a new column which will work as Note for you.
Can I add notes to other form elements, or is that not possible?
Could you elaborate further regarding this? Would you like to add a note inside one of your fields (which your user has to field)? Or, are you referring to adding a hidden field, then add your notes into the hidden field?

Basically what I need to be able to do is beside each question, I need to
be able to make my own notes alongside the client submissions (ie: not one
note box at the end, I'd like my notes to be beside each of the answers).
Is that something that is possible?

I made a clone of your form https://form.jotform.com/201813990316050 to show a potential workaround that you could have. I sent through a couple of test submissions to show how you could potentially do this.
Similar to having one note column at the end of the submissions, you could add multiple Notes columns and then move them into place behind each column for your notes like so:
