The form is for one product at a set price, but there is variable shipping that needs to be charged based on the province in Canada:
- on the first product, 3 different shipping rates - should automatically be charged based on the province entered
- on the second and subsequent products, a reduced shipping rate - should automatically be charged based on the province entered

Unfortunately, there are only two SHIPPING options within Square. It's either you charge "PER ITEM" or "PER TRANSACTION":
For PER PRODUCT ITEM, you have to specify the cost of shipping each item. Do note that if the ADDITIONAL ITEM COST is left empty, buyers will be charged a flat rate based on the FIRST ITEM COST.
The ADDITIONAL ITEM COST is also applicable if you have set up a QUANTITY option for your product.
While for the PER TRANSACTION (Flat Rate), your buyers will be charged for the shipping cost you specify regardless of what item they choose or how many they buy from your payment field.
GUIDE: How-to-Add-Shipping-Cost-to-Payment-Forms
Since the requirement is to charge the shipping based on Provinces, we can instead create the products outside the payment field, make a formula to manually calculate the shipping cost, and just pass the calculated value to the payment field.
Please check this ticket which has relatively similar requirements as yours: https://www.jotform.com/answers/1707056
