How do you use conditions (update/calculate field) to populate a field in the Stripe payment widget with information from a previous page?

Would you mind letting us know the details that you want to populate in the Stripe field? What information do you want to pass and from which form?
Please share the URLs of both the form?

How would someone take the first and last name fields on page 1 populate the first and last name fields on page 2? -

Unfortunately, it is not possible to populate the name field on Stripe coming from the name field other than the URL parameter method.
You can pass the first and last name in the Stripe field via the URL:
