I'm not understanding how I keep getting blank submissions on my forms.

To which form is your issue related to? I tested your Loan Application form and the data I submitted is shown on the Sheets/ Submissions page.
If the issue is related to some other form, please provide us a form URL. If the form is embedded provide us a webpage URL.

I checked and that form has only one submission which is blank. It looks like a user submitted a form without entering any data which should not be possible considering that you have required fields.
I tried to test your form but I was not able to submit it. There is a required "Read-Only" field that cannot be skipped.
How are your users submitting the form considering that there is a Read-Only field that cannot be skipped? Is your form embedded? If so, please provide us a webpage URL so that we can test the form there.
I have also cloned your form and made a few tests after I disabled the Read-Only field. All data I submitted is shown on the submissions page.

I've disabled the read-only option on the said field on the form. However, this is not the only field that is required. If the issue persists for new submissions (no entry), please inform us through this thread right away so that we can investigate further.
