If I understood correctly, you are receiving two PDF Attachments via Email Notification, but you have only one PDF Document.
To which form is your issue related to? Please provide us a form URL.
I suspect that you also created a Fillable PDF Form and that the PDF Form is attached along with the PDF Document. If this is the case, please delete your Email Notification and create a new one to see if that will resolve the issue.
