Hi,
I have checked your shared forms and it seems that there were notifications and autoresponders set up on it. The problem that I noticed is that the account of the form owner's email address is on our Bounce List. I think that's the reason why you are not receiving email notifications.
I have removed it on our bounce list, to further prevent this issue, kindly check this guide: Why Am I Not Receiving Email Notifications
If you are still not showing email notifications on your forms please provide us the URL or direct link of the form to investigate on it.

Thanks - but that is not the issue. When I select any form, and click Edit Form, and then look at Publish > Email... I don't see the email notifications that I had created (in case I wish to edit them further). They just don't appear.

I see you are instead referring to the Reminder Emails. Can you please share to us the Form URL so we can check on it.

To avoid confusion, I must ask is this issue persisting on your end?
As far as I checked some of the forms that are shared with you, I have seen that they do not have reminder emails both in the main account and in your account.
Could you provide more information about the issue you have faced?
