Have a form with Paypal payment at the end. I have a customer that wants to pay with a check and because I didn't set that up yet, they can't submit the form. Can someone walk me through that?

You need to use hide/show conditional logic for that. However, the items in your Payment field will be listed in the multiple-choice element. Once done, you can assign calculation values to each option.
Guide: How-to-Assign-Calculation-Value
Then use the form calculation widget to get the value of the chosen option.

Once you set up the form calculation widget, add a single option element and then show/hide the PayPal field based on the user's answer.

You can then setup PayPal checkout to get the value of your items in the form calculation widget.
