HI, I would like to set up the email so that the confirmation shows as if it has come from me not jotform

You may consider setting up SMTP account to send the email notifications or autoresponders using your email address. Please refer to the guide below:

I have followed these instructions and had the correct information provided from my email provider and still the emails are still coming from jotform

It seems that you are sending the Test emails from the Notification settings. Please note that the test emails shall be sent to the account registered email address and only using the JotForm default email address. Please try sending a test submission to the form so that the email shall be sent using the SMTP email address set for the notification.
