I need in particular to know if the option exists to download the files in text format because some of the data gets corrupt when downloaded into csv or excel. Mainly focusing on the phone numbers and the submission ID, which I need to match to payments received through Stripe.

Hi Densil,
You can also try downloading your submissions as a PDF document. Let me walk you through it:
- In the Jotform Table, select the submissions that you want to download. You can also select all the submissions by ticking on the first box on the left side of the page.
- Click on the Download All button on the upper right side of the page and select Download as PDF.
- A confirmation message for Creating a zip file will pop up. Click on Ok, Got It".
- You will receive an email that Your PDFs are ready for download. Click on Download your PDFs.
Another workaround is attaching submissions as PDF to your notification email. Let me show you how to do this:
- In the Form Builder, click on Settings on the orange navigation bar at the top of the page.
- Select Emails from the left side window and click on the Pencil icon of the notification email.
- From the Advanced tab, enable Attach PDF. The Default Document will be automatically attached.
- Click on the Save button at the bottom of the page.
