You can charge the users only once for each form submission they make.
You can make all kinds of calculations by assigning a calculation value to the options of the fields and using those fields in calculation expressions in the Form Calculation Widget.

The calculated result can then be passed to the payment field.

I think I'm doing something wrong I am trying to make a Cruise registration
form that will allow the client to choose from EX: Interior Cabin $300,
Ocean View Cabin $400, Balcony Cabin $500 with each choice requiring a $75
deposit. The form will not allow me to have both I have to use the sell
products feature but it will not allow me show deposit calculations. Please
help!!

Have you tried my colleague's workaround about using regular fields as products then perform calculation? In this method, you can always add amounts along with the selected products e.g. deposits. After that, you can pass the final calculation to the payment field. Is this what you're trying to achieve?

One issue I have come across is if my client sends it out to people I will only receive their payments not their information because I don't think it will not come to my email. Would this be true? Please look at my form

I am not sure if I understood your question correctly.
When the form you provide is submitted the payment will be sent to the PayPal account that is integrated with the form. I checked the form and PayPal is integrated with your client's email address. Your client will also receive the Email Notification, with submitted data from JotFrom.
You will not receive any email to your email address zs*******4@g****.com.
If you want that the Email Notification is set to your client's and your email address, then please check the following guide.
Send Notifications to Multiple Recipients
I also noticed that the Autoresponder Email in your form is not set correctly.
The Recipient Email should be the email field.

address dob, etc...I will not receive so I can reserve their cabin space.
The submit goes to the paypal link but where is the registration info going?

You will need to create an email notification that will send to your preferred email address. If you don't have that in your form, then no notification will be sent to you.
Please read our guide here https://www.jotform.com/help/39-Send-Notifications-to-Multiple-Recipients. The answer to your question on how to receive the name, dob, address etc.. is there so please read the guide and apply it to your form.
