I have set my account language to German to create a german form and most of the buttons etc. are in German now but unfortunately not everything. The following things still show up in English and I can't figure out how to translate them:
1. all validation error messages (see screen shot, red writing)
2. The whole E-Mail validation process (screenshot attached) and the confirmation email with the code is also in Englisch
Can all this be translated to German?

You may change the form warnings following this guide: https://www.jotform.com/help/61-How-to-Change-Form-Warnings
This way, you may use translated warnings for your form. You may also use our translate tool, you will find more details here: https://www.jotform.com/help/298-How-to-Make-Your-Forms-Multilingual

Hi Kevin,
thanks for your help. I could change some warning in those settings but the whole E-Mail validation process as shown on the screenshot above and the validation E-Mail with the Code are still in English and I can't find a way to translate them. Any idea?

Unfortunately, it is not possible to translate the email validator widget.
I will forward this to our backend team for a possible implementation, but I'm afraid that we cannot give you an ETA or promise that it will be implemented.
