So if the roster has 10 players, can the table automatically have 10 rows (one for each player) but if the roster has 12 players, can the table have 12 rows. So I would ask how many players are on your roster and that answer would dictate how many rows my table would have (in the next question).

To my understanding, you want a field and enter a value of how many players you want then it will generate a table row equal to the value.
I am not sure if that is possible for the Input Table field or Spreadsheet widget.
You can try the Infinite List widget or Configurable List widget. The widgets can add a new line field as many as you like. Here's a sample of Infinite List widget:
