Hi,
I'm setting up an infinite list which has ten columns. Only the first seven show up clarly when you have data, and half of the next one. There data does seem to be captured as it shows up in the form inbox when I ran a test through the system, but for the end-users, it would be useful to see the full details in the infinite list.

I've cloned your form and was able to view all 10 fields that you have added when loading the form URL.
Also, I've made a sample submission and all 10 fields data are shown in the submissions page. Are you still having issues with Infinite List widget?
With regards to the limit, I believe there isn't any but for optimization purposes, adding a more fields will increase your widget's load time. Ex. if you currently have 10 fields in your widget, adding like 100+ fields will add more time to load the widget's fields.
Let us know if you have any questions or if you need further assistance.

Thanks for that. Yes,t his is what I see too. The one thing that doesn't show up is when you have added one entry/row and are adding another on the form. The fields get cut off. I can probably live with it, but if there was a workaround that would be great!

In your form designer, try adjusting the width to 975px.
Should look something like this:
