Hello...I added the adobe sign widget to my form. I completed the steps to authenticate and verify the adobe account, and then updated the widget. Jotform is also listed on the permissions in the adobe account. However the widget is still not working. The error message includes "missing token." Please help!

We are currently not having any issues with the Adobe Sign widget. I tested it with my own account and I can verify that it is working as expected.
I checked your form and I can see that the Adobe Sign widget is not yet authenticated. Here's a screenshot:
Please go back to the Form Builder and redo the authentication.
After putting the Document Title, please click the "Authenticate" button. A pop-up will appear where you need to enter your Adobe Sign credentials.
If it is successful, you will see a message saying "Verified".

I authenticated the account several times. Even though I completed that step, updated the widget and received the verified message...it seems as if it would not stick. I would log out and back in again, and I would have to start the process over each time.

I have been testing this on my end and I'm unable to replicate the error you're experiencing. The widget authenticates and works when previewing the form:
May you please try authenticating using incognito mode?
Might be that there is a cache issue, so using incognito mode should help to use clear data and the problem may not be there if it's related to cache.
While using incognito mode, go to the builder and edit the widget, please make sure that you're authenticating the correct account and once you've noticed it shows as "Authenticated" on the widget click on the update widget button, check that the changes have been saved properly and preview your form.
If the problem persists, please provide us some screenshots of the authenticated widget and then how it shows when you preview the form.
If possible you may also get the console report so we see if there is any error that avoid to save the authentication.
