my credit card processor [authorize] works also with NIS and I would like to be able to offer that option to my Israeli donors.

Hi,
Unfortunately, Authorize.net itself has a limited number of currencies it supports and it also depends on where the Authorize.net account is located, here's an article about it: https://support.authorize.net/authkb/index?page=content&id=A414.
Right now, the Authorize.net payment integration in JotForm supports the following currencies which are listed in the payment settings:
Upon checking our payment integration list, these are the following that has support in NIS (New Israeli Shekel) currency:
Stripe
PayPal
Braintree
2Checkout
eWAY
First Data
You might need to consider creating a separate form that will use any of the following above for your Israeli donors.
