I’m just trying to find my way around this issue or the whole form I just created can’t be used ☹ -

Yes, it is possible to turn off or disable the email notification. In this way, you will not receive an email when someone completed the form. Here's how:
In the Form Builder, click "Settings" in the top menu and then go to "Emails" section. Select the notification and then click the "Delete" button.
