if I embed the form code into our internal sharepoint site, is the data that we capture still stored on your server, or is it on my local sharepoint ?
need to understand where the data captured is actually physically stored. -

When you embed the form on your internal site, you are using the source code of the form. Part of the source code is to send the data to your account storage by default. However, you can also try to export or integrate the data using Google drive.
