Do I understand correctly that an auto email goes out to my client who just filled out a form? I don't need this to occur, how do I change it so the client fills out the form and I am the only person who receives an email afterwards?

Dear Jen,
You only have to delete the auto-responder, do as follows:
- Access your form in Edit mode, click Settings, Emails, select Auto-responder and click the trash bin, as shown below:
