I did test this feature and it is not possible, but you may add a date field and set there the current date, so when the form is edited it will capture the today's date and it will be saved as the edition date.

I think my colleague's solution is the best way to chance it.
I think you want to hold both old submission and edited submission to compare them. I've also tried to separate them with Unique ID widget. However it didn't work for your request.
Please try my colleague's solution and let us know the result.

I have added an Edit Date - date picker with time and have hidden it from the form / made it read only.
This works perfectly, the only problem is, on edit its visible and editable,

You can hide/show the hidden fields as you see below on your submission page:
In addition to that, I am trying to show both submissions on different way. I will test it on my side and I will get back to you soon.

You can view both submissions on your notification as you see below.
Further more you can separate your notifications with unique ID widget. I tested unique ID widget with different way. it is working properly now. I will show you how to do this step by step.
First of all, we will add the unique ID widget on our form.
After that, we will add that unique ID tag to our title of notification as you see below.
It wont separate the submission. However it will separate the notification. At that time you will be able to see both old submission and edited submission when you receive notification.

Thanks for this, my main concern (and if fixed will help me out) is that the edit date date picker I have placed on the form is hidden on the form but I do want to see it on the PDF form. The problem is, when i edit the FORM, this date picker is both visible and editable on the edit form - I dont want that,

Thank you for letting us know. You can disable your DateTime fields on Edit Submission mode as you see below:
At that time, you will not see those fields on your submission. However, when you disable them they also will not visible on PDF submission. But you can see the 'Dated' field on PDF form.

i think there is a bit of confusion,
I want to see the edit date on the PDF form, I do not want to see it when I click the edit link to edit the actual form - it is meant to be a hidden field on the form that gets a default date value when the for is edited,

Ok. If I understand your request correctly you want yo see the Edit Date field on your PDF Form. At that time, you need to Show that field as you see below so your customers will able to see it but they wont be able to change the value since it has read only function.

On the other hand, if you mean PDf submission. When you uncheck the field on submission page you will not see it on submission.
However, I realized that it is not possible to disable hidden fields on Edit mode even if you disable them on submission.
However, you can disable it with simple condition rule. At that time, you won't see it on edit mode.
In addition to that you said that I want to see the edit date on the PDF form.
Do you mean PDF submission or PDF form?
